Written by Barbara Tropp, an American chef and writer who helped introduce Americans to Chinese cuisine, this classic on Chinese cooking features over 200 recipes. Tropp dedicated her life to the study of Chinese and Chinese culture, and learned Chinese cooking when studying at the National University in Taiwan. She then worked to recreate and share the refined food and way of dining she experienced during her time abroad. Tropp was the chef at celebrated San Francisco restaurant, China Moon, where she cooked and taught as long as her health allowed. This book is considered one of the foremost authority on Chinese cooking.
